Ceviche, Enchiladas, and More…But, Make It Vegan!

On this gorgeous September evening, the deck was completely full by 5pm. Mimi Loureiro, our chef of the evening, was giving the guests a run through of her menu and inspiration. An expert in plant-based cuisine, Mimi’s goal was to make food that everyone loves, but vegan! 

The night’s offerings were inspired by traditional Mexican dishes, with the full menu below:

  • Ceviche de Palma with Chips

  • Enchiladas Three Ways:

    • Mole with Potato, Spinach, Corn & Soyrizo

    • Red Sauce with Black Beans, “Beef” & “Cheese”

    • Green Sauce with “Chicken”, Peppers & Mushrooms

  • Seitan Carne Asada

  • Sides of:

    • Kale, Cabbage, Sweet Potato Salad with Jalapeño-Cilantro Dressing

    • Rice & Black Beans

    • Guacamole & Pico de Gallo

    • Cashew Crema & Volcanic Ash (Hot Sauce)

  • Raspberry Tres Leches Cake

While everyone filled their plates and began conversations with new faces and old, Nick Mallia of Bar Lunette, our consummate bartender, mixed up cocktails to knock your socks off. The drink designed for the evening was The Clothed Nobody (a riff on the Naked & Famous): Arette Tequila Blanco with Aperol, Liqueur Strega, lime juice, Xocolatl molé bitters, and garnished with orange peel. Nick’s creation was a perfect pairing for Mimi’s dinner, per usual!

As at our August dinner, our raft once again cruised the pond for a few guests to enjoy the fresh dusk air on the water. It seemed as though Mimi and her husband Steve brought out new platters of food nonstop. Luckily for us, she was equipped with several containers for guests to take home leftovers (eagerly, at that!) 

Mimi is a true master of interpreting traditional dishes for the vegan diner. Not only was the food incredible, but many were amazed at how the dishes were so undetectably plant-based. So, on top of enjoying another fantastic meal, guests got to experience the art of skillful vegan cooking.
