The First Event of the 2024 Season with Chef Saba Wahid

FOOD: Chef Saba Wahid, Owner of Kush by Saba

CHRONICLER: Henry Patterson

May, 2024

We had perfect weather for the sell-out crowd attending our first Jim Haynes dinner of 2024. I was excited to introduce Chef Saba Wahid and her sister Sara. They presented Saba’s original take on Eastern Mediterranean fare including several plant-based dishes that were just stunning. To me the most memorable was their tabbouleh, a delicious variation with beets and quinoa (see the photo).

Here’s the whole menu:

  • Beet Hummus with Za’atar Pita Chips

  • Kush Signature Salad: Arugula, Shaved Fennel, Radish, Pomegranate with Lemon Truffle Vinaigrette (GF & Vegetarian)

  • Kale Caesar with Za’atar Pita Chips and Preserved Lemon Anchovy Dressing

  • Harissa Brown Sugar Braised Beef with Golden Pearled Couscous and Hara (Cilantro) Sauce

  • Lentils and Rice with Crispy Shallots and a Creamy Herbed Yogurt Sauce (GF & Vegetarian)

  • Beet and Quinoa Tabbouleh with a Cumin Citrus Vinaigrette (GF & Vegetarian)

  • Curry Spiced Falafel with Maple Tahini Drizzle (GF & Vegan)

This fall Saba and Sara will open their first brick & mortar, Kush by Saba, in Union Square, Somerville. I hope we’ll see them at future Jim Haynes dinners as guests as well as chefs.
